The format is not the point. The leaf is the point. Here is what each format actually does to the cup — and what to look for if you want a good one regardless of shape.


Loose Leaf, Tea Bags, or Pyramid Sachets: What Actually Matters

The biggest difference between formats is not loose leaf versus bagged — it is whether the tea inside is whole leaf or dust. A pyramid sachet of whole-leaf tea brews almost identically to the same leaf loose in a teapot. A flat paper tea bag of dust brews into something else entirely. The format is a delivery mechanism. The leaf is what matters.

This piece walks through what each format actually does, why supermarket tea bags get a bad reputation, and what to look for if you want a good cup regardless of how it is packaged.

The three formats

Loose leaf

Whole or near-whole tea leaves, sold by weight, brewed in a teapot with a strainer or in any vessel with a removable infuser. The original and still the benchmark. The leaves have room to unfurl, water circulates around them, and you can adjust the leaf-to-water ratio and steep time precisely.

The downside is friction: you need a strainer, you need to measure, you need to dispose of wet leaves. None of this is hard, but it is more involved than dropping a bag in a cup.

Flat tea bags (dust grade)

The format invented in the early 20th century in the United States. A small flat paper bag filled with broken tea (fannings) or tea dust (dust). The fine grade extracts quickly because there is enormous surface area, which is what produces the strong "punch" of supermarket black tea in two minutes. It is also what produces the tannic, slightly papery cup most loose-leaf drinkers associate with bagged tea.

The issue with flat tea bags is not the bag — it is the grade of tea inside. Fannings and dust are what you get after the whole-leaf grades have been removed and sold elsewhere. The leaf itself has less aromatic complexity, less amino acid balance, and a shorter useful steep window before turning bitter.

Pyramid sachets (whole-leaf)

The newer compromise format. A larger, three-dimensional bag, usually mesh or silk-like nylon, that holds whole-leaf tea with enough room for the leaves to unfurl. Pyramid sachets behave much more like loose leaf than like flat bags — the same leaves, the same chamber-to-water dynamic, just with a built-in strainer.

The format was introduced in the late 1990s by PG Tips and Lipton, and quickly adopted by premium houses (Tea Forté, Harney & Sons, Mariage Frères, and most newer specialty brands) because it solved the friction problem of loose leaf without compromising the leaf grade.

What actually changes between the formats

Three things matter for the cup, and all three of them are about the leaf and the space it has:

  1. Leaf size. Whole leaves extract more slowly and more evenly than broken leaves; the cup is more nuanced. Dust extracts fast and flat.
  2. Space to unfurl. Compressed tea (a flat bag, a packed teaspoon-infuser) brews unevenly because water cannot circulate. A pyramid sachet or a generous teapot gives the leaves room to open up.
  3. Water flow. Tea wants to be infused, not soaked. A loose infusion in a teapot or a sachet floating freely in a cup gives circulating water. A tea bag pinned against the side of a mug, or a small mesh ball stuffed full of leaf, restricts flow.

Notice that "loose leaf" is not on the list. The format itself is not what changes the cup; the leaf grade and the brewing space are.

The sachet material matters

Not all sachets are equal. Three types are in use:

  • Plastic mesh (nylon or PET). Visually clear, holds shape well, allows good water flow. The environmental concern is microplastic shedding at brewing temperatures; some studies have detected microplastic particles released into the cup.
  • Cornstarch-based (PLA). A bioplastic mesh, often marketed as compostable. Performs similarly to nylon at brewing temperatures and is generally considered an improvement on plastic — though "compostable" usually requires industrial composting facilities, not home compost.
  • Plant fibre (Soilon, Manila hemp, abaca). Truly natural mesh made from plant fibre. Slightly less crisp visually than the synthetic alternatives but compostable in home settings.

Reputable premium houses now disclose the material on the box. If they do not, ask.

Tasting test

The clearest way to understand the format question is to taste it directly. Take the same tea in two formats — loose leaf and pyramid sachet, ideally from the same producer. Brew them under identical conditions. The cups should be almost indistinguishable. Now compare either of them against a supermarket flat bag of the same nominal tea. The cup will be different in ways that have nothing to do with the format and everything to do with the leaf inside.

Once you have done this once, the format question stops being interesting and the leaf question starts being the only one that matters.

So what should you buy?

Three principles:

  1. Buy whole-leaf, regardless of format. Look for "whole leaf" or "whole-leaf grade" on the label. If the leaves look broken into dust when you open the tin or pyramid, that is dust grade.
  2. Buy fresh. Look for a harvest year or "best by" date. Tea is not infinite — green tea wants to be drunk within a year, black within two.
  3. Buy from somewhere that names the origin. A box that says "Ceylon" or "Darjeeling First Flush" is doing more than one that just says "black tea." A box that names the specific garden or estate is doing more still.

Format follows from your own preference: loose leaf if you like the ritual, pyramid sachets if you want the convenience without the compromise. Avoid flat dust bags unless you specifically like that style — which is a legitimate preference, but a different one.

FAQ

Is loose leaf always better than tea bags?

Not inherently. Loose leaf is usually higher-quality because most premium tea is sold that way, but a whole-leaf pyramid sachet from a good house is essentially loose leaf in a pre-portioned bag. The format is downstream of the leaf grade.

Are pyramid sachets bad for the environment?

Depends on the material. Plastic mesh (nylon, PET) is the worst — both for shedding and for end-of-life. Cornstarch-based (PLA) is better but typically requires industrial composting. Plant-fibre mesh (Soilon, abaca) is the most environmentally friendly and home-compostable. Premium houses are increasingly moving to plant-fibre mesh.

Do pyramid sachets release microplastics into the tea?

Studies have shown that plastic-mesh sachets shed microplastic particles when brewed in hot water. Plant-fibre or PLA sachets do not have this issue. If you are concerned, check what your sachets are made of and look for plant-fibre options.

Why are tea bags so much cheaper than loose leaf?

Because most commercial tea bags use dust and fannings — the grades that remain after whole-leaf has been removed for other markets. Lower input cost translates to lower retail price. A whole-leaf pyramid sachet costs roughly the same as the loose-leaf equivalent because the leaf is the same.

What is "fannings" vs. "dust" tea?

Industry terms for two grades of broken tea, in descending order of leaf size: orange pekoe (whole leaf), broken orange pekoe, fannings (small broken pieces), and dust (powder-fine). Most flat tea bags use fannings or dust. Premium pyramid sachets use whole or near-whole leaf.
